Microwave White Chocolate Cranberry Fudge

Ingredients

  • 680 g white chocolate chips
  • 300 ml sweetened condensed milk
  • 1 tsp pure vanilla extract
  • 170 g dried cranberries (roughly chopped)
  • tsp salt
  • christmas sprinkles

Instructions

  • Line a 20 cm square pan with parchment paper making sure it extends over the sides.
  • In a large microwaveable bowl, combine the white chocolate chips and sweetened condensed milk, and microwave on HIGH for 1 minute.

  • Stir well to combine, allowing the heat to melt the chocolate chips.
  • Return to microwave for another 30 seconds until the chocolate is completely melted and smooth.
  • Stir in the vanilla extract, dried cranberries and salt and quickly transfer the mixture to the prepared pan and spread evenly.
    1 tsp pure vanilla extract, 170 g dried cranberries, ⅛ tsp salt
  • Top the fudge with the christmas sprinnkles, lightly pressing them so they stick.

  • Refrigerate until set.
  • When set, remove fudge from pan and cut into squares. Store in a covered airtight container in the the refrigerator.
